USING COOKIE CUTTERS WITH GELÉE
- Prepare Gelée according to package instructions in a square mould
- If working with multiple packages of Gelée, you can use a shallow ¼ or ½ sheet cookie tray or baking dish to create more surface area for cutting shapes
- After Gelée has set, prepare to cut the Gelée right in the square mould or shallow pan without unmoulding
- Prime cookie cutters for use by soaking them in a bowl of hot water. Have some clean dish towels at your side.
- Select the shape you want to use, remove from water and quickly pat dry on the towel
- Press the warmed cookie cutter down firmly into the Gelée, then lift carefully to remove the cut Gelée and cookie cutter
- Carefully remove the Gelée from the cookie cutter and set aside
- If using the same shape again, put the cutter back in the warm water for a few seconds, pat dry and cut again
- Periodically replace the water in the bowl with fresh hot water to keep the cutters warm
- Serve your Gelée shapes immediately — or place cut shapes onto a plate or tray and store in the fridge until ready to serve. Shapes will lose their definition as they warm.
- Enjoy the excess around the cookie cutter edges as you go!
